Mexican Rice

My take on simple and delicious Mexican rice. Mexican rice is my go to comfort food. Its hearty with all the beans and rice thats in it. Made with basic ingredients its a popular dish for taco night. Its super easy to make and cooks in under 30 minutes. Lets jump right into the recipe.

Ingredients

  • 2-4 tbsp oil
  • 1 medium onion
  • 2 garlic cloves
  • 1 serrano pepper
  • 1 tbsp red chili powder
  • 1 tbsp corriandor powder
  • 1 tbsp cumin powder
  • 1/2 tbsp salt
  • 1/4 tsp turmeric powder
  • 1 1/2 cup medium grain rice
  • 1/2 cup kidney beans (canned)
  • 1/2 cup black beans (canned)
  • 1 cup tomato puree (canned)
  • 1 1/2 cup water
  • Cilantro for garnish
  • Mozzarella cheese (optional)
  • Sour cream (optional)

Directions

  1. Heat oil on medium high heat and saute sliced onions till lightly golden and translucent.
  2. Toss in some minced garlic cook one minute and add in some roughly chopped serrano pepper.
  3. Add in rice and saute for a minute or two and add in all the dry spices mix well.
  4. Cover and bring to a boil then reduce heat to medium and let it cook for 7 minutes then bring the heat down to low and cook for 20 minutes or till rice is done.
  5. Fluff with a fork. Serve with some sour cream and mozzarella top off with cilantro.
