Cutlets – Potato filled patties

When you typically read cutlet on the menu your mind goes straight to a thin slice cut of meat whether it be chicken or beef. But nope thats not what we call cutlets. we grew up calling these potato stuffed with ground beef cutlets. To be honest I have no idea where to name even came from. I just know people from India and Pakistan make them. Though their are variations to making these, some make them with a yogurt filling, then I have heard people make them with out breadcrumbs. I have this recipe that I have been using for years, its a very basic and simple to follow recipe.

Aloo Tikki

Aloo Tikki is basically softened potatoes mixed with a few spices and fried till golden brown. Its pretty well known I feel in all international cuisines there is something similar to this. Aloo Tikki is flavored with traditional indian spices, a egg and breadcrumbs. They are perfect to keep on hand in our busy schedules. You can make the tikis and prior to frying freeze them for later use as well. They are so full filling and kids love these with a sauce on the side to dip in. You can definitely add some peas to the mix or opt out of any spices that you feel are too spicy for you. Its a very simple and easy to make recipe which can be made in no time.

Spring Rolls

My famous yet not so famous spring rolls. These are a family favorite. Every bite is crunchy and the spring roll itself has a delicious chicken filling inside. It’s a very simple recipe, nothing too complicated so you will be able to make these with ease. I have had a love and hate relationship with spring roll sheets. I remembering crying and getting so annoyed at the sheets every time they would break or pop while frying. I would try so hard to roll them with less filling or add dough mixture so that it would act like glue. But nothing ever seemed to work properly. I eventually realized its the spring roll sheets and if you are not using the right one nothing works. My favorite go to spring roll sheets are from spring home. You can find these in indian stores or any asian store, I have came across these at Walmart as well. These spring rolls fry so well and the best part is that they don’t need anything for binding purposes. Just dipping your finger in water and that helps it seal the spring roll. Lets get started with this crunchy yummy recipe.
